September left my old job as yacht supplier and decided to get on board. First gig as dayworker on M/Y The Wellesley
Thanks to The Wellesley I attended the first Antigua Charter show as a crew member, on deck at that time.
In January I received a call from Captain Max, he was looking for a dayworker for M/Y Capella C, that month I scored my personal record as highest salary ever received.
My very first contract signed with Capella C, Deckhand at bare minimum € per month
The turning point, after a series of unfortunate events, on pick up day the Chef decided to leave, Captain Max called me up on a bridge, he was aware of my past as chef, asked me to cook a few meals to the crew meanwhile he was busy looking for a new chef.
After two season as Sole Chef on Capella C it was time to get back to the Caribbean.
First charter boat, a 20mt Sunreef Power Cat, back to Antigua and attending my first chef competition, not the result I was aiming for but the ball was now rolling in the right direction;
After a stormy period on Mayrilou, I decided to call it and move to Florida on M/Y Vibrance, it didn’t work out;
M/Y Kaleen gets in the picture and helps me to find some trust in the industry, sweet gig, puts me back on track after a tough period;
Thanks to a long period of holidays in SXM, I decided to get back on Mayrilou, brand new crew, high expectations and motivated to get the job done nicely;
Not the way we wanted, during a night passage with guests on board, the boat run aground, it’s game over;
After a few months at home, I decided to give a last chance to the industry, swim or sink were the only two options. No charters, no fancy yachts, I got back on a sailing boat to try something new, to check the other side of the industry. S/Y Valquest delivered the most incredible Caribbean season ever;
Back home after my first Atlantic crossing, the world paused for few months, COVID happened and see you later!
About 5000 burgers later I’m back on board! I wanted to start slowly, nothing to mental and crazy. M/Y Stae a little San Lorenzo was exactly what I needed it. Very little I knew about those two, Captain Rai and Chief Josie, who later on became a very important part of my career;
After the test on a private boat I felt ready again to put myself under the pressure of charter guests. M/Y Impromptu became home for the italian chef;
First course at MUDEC a 3 Michelin stars restaurant in Milan, one month that changed my approach to the culinary scene;
It took a 75mt boat to defeat me at the St Thomas Chefs Competition;
Bruised and battered after one year of charters, I joined Rai and Josie on their new boat M/Y Sea Wolf, private 38mt, what was supposed to be an easy summer turned into the busiest boat ever;
Another course in a 3 Michelin star restaurant, a great experience that sharpened my skills.
Third season with my dream team Josie and Rai. 18 weeks with guests on board, over 130 different menus for what I remember as my best cooking performance;
Landing my first rotational gig as Head Chef on board M/Y Addiction. Crossing to the Caribbean and a super chilled season with a lovely bunch of crew members and my beloved Sous Chef Essie!
M/Y Addiction was sold, last night in Monaco with the crew with a promise to work together again which didn’t happen, the price for a lovely easy season land on top of my head like a fire axe;
Joining M/Y Seven Sins as rotational Chef, starting the charter season with a banger, the ultimate party during the Monaco GP!
